Quinoa Vegetarian Recipes

Good vegetarian diet advice?
Hi, I’m just going into being a full vegetarian after some time of starting, and doing some grocery shopping tomorrow so I need a little help on what to buy to do it properly. I have looked at some websites so I know some, but I just need easy recipes that other people have tried and liked before.
I will be getting lettuce, broccoli, eggs, rice and beans. I want to try tofu and but don’t know what kind? also for quinoa?
and for those who are vegetarian now, what do you eat through the day? for breakfast lunch and dinner?
I think I found a pretty good website to use for the daily meal plan, is it accurate? =D

There are some great meals out there that just happen to be vegetarian–I think it’s important to not limit yourself to thinking of meals as “vegetarian”, but just think of meals that you like and then come up with ways to leave the meat out. Sticking to a diet is always easier when you actually like what you’re eating.
You can find tons of vegetarian and vegetarian-friendly ideas at http://cheaplazydelicious.wordpress.com/recipe-index/ (including some curries). I eat a lot of beans (kidney, pinto, chickpeas) for lunch and dinner, and usually have some yogurt for breakfast. Mexican, Italian, Thai, and Indian food are all really easy to make vegetarian since the meat isn’t usually so emphasized. Invest in a good, colorful cookbook that has recipes from all areas of the world–it doesn’t necessarily have to be vegetarian to give you some good ideas for recipes. I hope this helps
