Quinoa Flakes Recipes
Can I substitute Kamut flakes for Quinoa in cookies?
Received a highly recommended wheat-free cookie recipe but it calls for Quinoa Flakes and I accidentally bought Kamut flakes. I know Kamut is related to wheat but my wheat sensitivity is mild so small amounts are OK, and I am using rice flour.
Should I change the recipe at all to accommodate the Kamut ?
Will the cookies taste much different ?
I would soak them in a bit of hot water and drain them before adding to the cookie batter, as unlike oats there a bit chewier.
Also for cookies flours like rye, rice, spelt, chickpea and teff are non gluten alternatives, unlike a cake in which gluten is need to rise with eggs and leavening, cookies need little or none as there crisper and need not rise as much, baking soda and powder do add some leavening, but for eggs, applesauce, pumpkin puree and a mix of flax meal soaked in hot water and strained add the essential elements of egg to recipes.
