2 cups yellow frozen corn
4 medium potatoes, cubed, skin on
Heat oil on stove top and first four ingredients. Keep stirring until onion becomes soft. Add in your cubed potatoes and yellow corn and 1/4 cup water. Let cook for around Ten minutes. Ignore heat, add quinoa. simmer so that all flavors may meld. You might vary this with any vegetable combination you want…in order to use up whatever you have inside the cupboard.
